Grilled artichokes  with Lemon Aioli and Dill

2 Jumbo Green Globe Artichokes
juice of 1/2 lemon
Extra Virgin Olive Oil
coarse sea salt

Clean and wash the artichokes well.  Steam artichokes in a covered pot with 2 inches of water with lemon juice until when a fork is inserted it comes out easily.  Let cool.  Cut in half from top to bottom of stem.  Heat grill on a hot setting.  Lower grill to medium hot.  Brush artichokes of both sides with olive oil and sprinkle with sea salt.  Place artichokes cut side down and grill for about 10 minutes until you have beautiful grill marks.  Turn over and grill on other side for about 5 more minutes.  Serve warm with Lemon Aioli.  Serves 4

Lemon Aioli with Dill

1/2 cup mayonaise
1 teaspoon lemon zest
juice of half a lemon
1/8 teaspoon white pepper
1 teaspoon dill, chopped
1 medium clove of garlic, minced
1 teaspoon extra virgin olive oil

Combine all ingredients and blend very well and smooth.  Keep chilled until serving.
